Quiche Lorraine with Emmental cheese (the one everyone agrees on) for 6 to 8 people
We took a well-buttered pastry (yes, the real thing), filled it with an ultra-melting egg-and-cream mixture, added plump, bistro-sounding lardons, and finished it off with the right amount of grated Emmental cheese.
The result is an honest, generous quiche, with no cheating or fuss.
It can be eaten hot, warm or cold... but rarely in silence.
